It is Friday and the sun is shining and for some reason today's Friday seems like a great day to eat pizza and drink beer. If anyone wants to assert another Friday dining ritual -I invite you to do so.
Pesto pizza with roasted bell is what I'll be having for dinner.....
Total prep Time: Allow 3-4 hours
- First, begin making your pizza dough
- Second, roast peppers in the oven at 500 degrees for 35 minutes. Once the peppers have cooled, slice them.
- Top your pizza dough with pesto and the roasted bell peppers. Top with your favorite cheese (in my case Parmesan)
- Bake pizza at 425 F for 25-30 minutes or until the crust is golden brown

Romina, Thanks for coming by Vegetarian Foodie. This pizza recipe could easily modify to be vegan.... and pizza for one is very realistic because pizza is equally as enjoyable cold the next morning!
